We have included some favourite Christmas recipes for you. They can be made for a party or as gifts.
Children can help to make them too.
3 cups rice bubbles (Rice Krispies)
1 cup mixed fruit
1 cup dessicated coconut
1 cup dry powdered milk
3/4 cup of sifted icing sugar
225 grams copha
drop of vanilla essence
Place dry ingredients and vanilla essence in a bowl.
Melt 225 grams copha in saucepan.
Add copha to dry ingredients in bowl and mix well.
Press mixture firmly into a biscuit tray.
Set in a refrigerator.
Cut into squares.
This is very rich so make the squares small.
White Christmas (with chocolate)
2 cups rice bubbles
1/3 cup mixed peel
1/4 cup currants
1/3 cup flaked almonds
125g of butter, melted
250g of white chocolate, melted
Combine all dry ingredients,
Melt chocolate and butter seperately and pour over the dry ingredients.
Prees into a greased lined tray.
Set in the refrigerator
You may use a combination of cherries, peel, currants and even a little glace
ginger, a truly beautiful Christmas recipe.
125gr granulated sugar
250gr plain flour
250gr self raising flour
Sift flours together, add sugar and butter. Knead well until all are smoothly mixed. (If weather is cold, warm butter slightly).
Divide mixture into four rounds about 6 mm (¼”). Cut each into four or eight wedges, pinch a frill around the edges and prick all over with a sharp fork.
Bake in a moderate oven about 20 minutes, then cool on wire.
NOTE: This has a coarse grained, crisp texture. For a fine texture, melt butter before mixing and use castor sugar.
225g plain flour
Pinch of salt
115g rice flour
115g castor sugar
225 g butter
– Sieve flour, rice flour and sugar into a bowl.
– Rub in butter and knead until a smooth paste forms
– Turn onto a floured board and make desired shape of biscuits. Prick biscuits with a fork
– Place on greased baking tray and cook in slow oven for 45 – 60mins, until pale brown.
Reindeer Food Recipe
This makes a great gift to hand out to the kids on Christmas Eve!
In a small ziploc bag or baby food container, mix:
1/4 cup oatmeal
1/4 cup sugar
Sprinkle of red or green sugar crystals (used for cake decorating) or
If you use a baby food container:
You can cut a circle of cloth paper or felt a bit larger than the lid. Place over the lid and tie a ribbon around it to decorate.
Label it Reindeer Food and add the poem below:
Sprinkle on the lawn at night
The moon will make it sparkle bright
As Santa’s reindeer fly and roam
This will guide them to your home.
An alternative is to label it Christmas dust and add this poem:
Sprinkle your lawn with CHRISTMAS DUST this CHRISTMAS EVE and wait-
The glitter will sparkle! Santa will see your house when it is late.
The sparkle is magic on CHRISTMAS EVE when seen by Santa’s eyes,
The smell of oats will guide the reindeer down from the highest skies.
